Industry Changes 1920 -1950 large companies used to be involved in both harvest and processing i.e. they produced everything; fresh meat, hot dogs, ham, sausage, etc. Swift - Cudahy - John Morrell 1950-1990 Large companies were very segmented- either slaughter or processing Harvest - IBP, Monfort, Swift Process - Oscar Meyer, Golden Satae foods - Exceptions- farmer John, hatfield Selling fresh meant- make small amount of money Today Today- Large harvest companies have begun to but/ create processing divisions They are involved in all sectors #1 Tyson Food Inc. (Poultry production company). Tyson bought IPT Poultry V.S Beef Production #2 Cargill Meat Solution #3 Smithfield Note Production facilities are very specific ad are usually designed to do one thing Pork Harvest floor (specialize – make sure no contamination) Ex. Pork sausage - the machine specialize on one thing Slaughter Animal Classification Species Beef, pork, lamb, etc
