Can lead to obesity, common problem in US (2) Some nutrients are toxic in large amounts v) Energy value of food is measured in calories (a) Carbohydrates 4 cal/g (b) Fat 9 cal/g (c) Protein 4 cal/g III. Carbohydrates (CHO) A. Provide body with energy. 55% of total caloric intake should be CHO i) Simple carbohydrates (sugars) (1) Sources: fruit, syrup, honey (2) Glucose, Fructose, Lactose, Sucrose (table sugar) (3) Must be careful not to consume too much sugar ii) Complex carbohydrates (long glucose chains) (1) Starches: cereal grains, potatoes, and beans (2) Broken down in to glucose and stored as glycogen in liver and muscles iii) Fiber
