1 Fermentation Experiments: Experiment 8-7: Microbial Food Preservation - Yogurt (pg ! Microbial Fermentation - Root Beer (Handout) Purpose : To demonstrate the process of fermentation by making yogurt and Root Beer. Fermentation has long been used as a means of food preservation especially in cases where refrigeration is not available. Many of the foods that you may eat or drink are the products of fermentation (i.e. root beer, beer, wine, yogurt, pickles, sauerkraut,etc.). Experiment 8-7: Making Yogurt Commercial yogurt is prepared using several species of bacteria: Lactobacillus delbrueckii subsp bulgaricus, Streptococcus thermophilus , and Lactobacillus acidophilus (the species used in our commercial yogurt). These bacteria ferment the sugar lactose that is found in milk to produce lactic acid which curdles the milk and causes it to thicken giving the yogurt its flavor. Ex 8-7: Making Yogurt TAs will be dividing the class into three groups (fewer groups depending on class size). Materials
