SOAP AND BEAUTY CREAM The cleansing action of soap involves the removal of oils and grease that bind dirt to surfaces. Water and oil do not mix due to the difference in polarity of their structures. However, adding an emulsifying agent will disperse oil in water. Emulsifying agents are substances that can be used to disperse an immiscible liquid (oil) in the form of finely suspended particles in the other liquid (water). This works because of the amphipathic character of emulsifiers which have both polar and nonpolar structures. Because "like dissolves like," the nonpolar (hydrophobic or water fearing) end of the molecule can dissolve greasy dirt. The polar or ionic (hydrophilic or water loving) end of the molecule is attracted to water molecules. Due to its structure, soap acts as an emulsifier. A soap is the sodium or potassium salt of a long chain fatty acid. The fatty acid usually contains 12-18 carbons. While the hydrophilic “heads” of soap interact with water, the hydrophobic “tails” will clump together to avoid interacting with water. This causes formation of a spherical structure called a
