11/12/2015 2 The Milling process 2. Sizing system- separates small bran pieces attached to the large pieces of endosperm. Adding water (conditioning) helps separation process. 3. Sifters can not separate pure endosperm, endosperm with bran and/or germ attached, and bran, if all particles are of equal size. The purifier is specifically designed to separate these particles. 7 Purifier Source: Grains and Oils, CIGI 8 The Milling process 3. Reduction system- reduces endosperm to flour Smooth rolls Low roll differential Increased moisture: toughens the bran-so does not break easily-contaminates the flour with bran Weakens the endosperm so that it does reduce in size easily 9 The Milling process 4. Tailings- separated fiber from the endosperm recovered from other three systems (break, sizing, reduction).
