Daugelaite, Food Science, UofM, 2014) 1 Overview Milling Wheat flour milling process Mixing Solid and liquid food mixing Equipment 2 Typical flow for laboratory mill 1. Break system 2. Sizing system (not shown) 3.Purifier 4. Reduction system 5. Shorts -mixture of small pieces of bran remaining after flour was extracted from the wheat. It is by product used for animal feed COR-corrugated SS-stainless steal 3 Wheat flour Milling process In wheat flour milling process broken into 5 systems: 1. Break system -separated endosperm from bran and germ: Fluted rolls-crush the bran High roll differential 4 Pair of break rolls Kent and Evers, 1994 5 Roll corrugation directions Source: Incorporated National Association of British and Irish Millers Ltd., 1992 Break system 6

11/12/2015 2 The Milling process 2. Sizing system- separates small bran pieces attached to the large pieces of endosperm. Adding water (conditioning) helps separation process. 3. Sifters can not separate pure endosperm, endosperm with bran and/or germ attached, and bran, if all particles are of equal size. The purifier is specifically designed to separate these particles. 7 Purifier Source: Grains and Oils, CIGI 8 The Milling process 3. Reduction system- reduces endosperm to flour Smooth rolls Low roll differential Increased moisture: toughens the bran-so does not break easily-contaminates the flour with bran Weakens the endosperm so that it does reduce in size easily 9 The Milling process 4. Tailings- separated fiber from the endosperm recovered from other three systems (break, sizing, reduction). The final stage of the milling where the last particles of flour is extracted The grinding is done on smooth rolls to minimize the bran and germ particles Sometime for high extraction flour are used corrugated rolls, using low pressure. 10 Common machine and flow configuration in a flour mill Source: Grains and Oils, CIGI 11 Schematic diagram of a modern flourmill showing the five main stages of the milling process.

As a current student on this bumpy collegiate pathway, I stumbled upon Course Hero, where I can find study resources for nearly all my courses, get online help from tutors 24/7, and even share my old projects, papers, and lecture notes with other students.

The ability to access any university’s resources through Course Hero proved invaluable in my case. I was behind on Tulane coursework and actually used UCLA’s materials to help me move forward and get everything together on time.
