Davis Berryhill NSC 170C Extra Credit 1: Spicy Food There are many spicy foods in the world that people just seem to be addicted to. Whether it goes from peppers to flaming hot Cheetos many people seem to rave over the satisfaction of having a fiery mouth. One very famous spicy condiment that millions have been raving over the past couple years is Sriracha. This spicy red sauce is made up of four major ingredients including garlic, red chili, vinegar, salt and sugar which all give it that unique and fiery flavor. But is the unconditional love for this sauce all because of these ingredients? No, and science can prove why many love food with a little kick to it. Inside red chillis, there are molecules that go by the name of capsaicinoids. Capsaicinoids include two major other molecules called capsaicin and dihydrocapsaicin. These two are the real reason of why foods are actually spicy. One taking into the mouth, these molecules trigger a protein by the name of TRPV1 which gives the hot sensations.
