Chapter 18 A.Amino acids and protein structure: Primary, Secondary, Tertiary and Quaternary structure. 1.Proteins are polymers of amino acids 2. –NH 2 + COOH + R Group = Amino Acid 3.Primary Structure – is the sequence of amino acids in a protein chain 4.Secondary Structure – is the regular and repeating spatial organization of neighboring segments of protein chains 5.Tertiary Structure – is the overall shape of a protein molecule produced by regions of secondary structure combinded with the overall bending and folding of the protein chain 6.Quanternary structure – refers to the overall structure of proteins composed of more than one polypeptide chain B.Peptide bond 1.An amide bond that links two amino acids together 2.Dipeptide - formation of a peptide bond between the –NH2 group of one amino acid and the –COOH group of a second amino acid 3.Tripeptide – results from linkage of three amino acids via two peptide bonds and so on C.Twenty common amino acids and their classification: Nonpolar, polar, acidic and basic. 1.Nonpolar Side Chains a)Alanine, Ala (6.0) b)Glycine, Gly (6.0) c)Isoleucine, Ile (6.0) d)Leucine, Leu (6.0) e)Methionine, Met (5.7) f)Phenylalanine, Phe (5.5) g)Proline, Pro (6.3) h)Tryptophan, Trp (5.9) i)Valine, Val (6.0) 2.Polar, Neutral Side Chains a)Asparagine, Asn (5.4) b)Cysteine, Cys (5.0) c)Glutamine, Gln (5.7) d)Serine, Ser (5.7) e)Threonine, Thr (5.6) f)Tyrosine, Tyr (5.7) 3.Acidic Side Chains a)Aspartic Acid, Asp (3.0) b)Glutamic Acid, Glu (3.2) 4.Basic Side Chains a)Arginine, Arg (10.8)
