Sylwester Czado 11-15-07 BIO 244, Lab #8 TA: Shannon Gerry Digestion Worksheet 1. For Exercise 1, the only tube that had the presence of starch was Tube #1. The additive was water with Lugol’s test and it proved to be only the only starch- containing tube. Since it contains water, it is not very acidic and the pH is high. The temperature was low during the digestion of starch by salivary amylase. 2. In Exercise 1, only Tube #1 contained starch which also had water. Tube #2 contained the most maltose which also had an additive of saliva. 3. My conclusions are that the lower the pH is, the faster you digest. Also, the higher the temperature is, the faster you digest. Water prevents starch from disappearing and from producing maltose. 4. In Exercise 2, tubes #2 and #3 showed the most egg white digestion. The optimum pH of pepsin is able to adapt to another pH because of acidity, so it can break down substances. It is able to pair up with HCl and then the pH becomes low and acidic.
