Lecture 007 – Membrane Biology The membrane is composed of many parts; while mostly associated to be made up a phospholipid bilayer, this is not always the case. In some cases, 60% of the membrane can be made up of protein, which gives the membrane its many functions. The phospholipid bilayer is composed of two layers of phospholipids, with the non polar tails lining up against each other, while the polar heads facing outwards towards the aqueous solution, thus forming a barrier. Fatty acids, come in either saturated or unsaturated forms, with unsaturated fatty acids containing double bonds, causing kinks, or bends, in the structure of the fatty acid. Saturated fats are normally solid at room temperature, while unsaturated fats are normally liquid at room temperature. The hydrogenation (addition of hydrogen) of unsaturated fatty acids creates saturated fatty acids known as “trans fats”. Trans fats have been linked to increased risk of coronary heart disease, and as a result, all foods with trans fats must be labelled in Canada, and a maximum of only 5% trans
