Jiro Dreams of Sushi Intro - Appreciate people who have mad skills who can make sushi - The 89 year old sushi master who owns Suchiabaki Jiro; born in 1925 - He is still very much alive and well- a michelin 3 star restaurant near a subway station in Tokyo; restaurant only fits 10 people - Michellen system out of France and 3 is the max stars you can get - Sukibachi is the first restaurant rated out of Japan (highest rated sushi restaurant on planet earth) - Famous restaurant - He has 2 sons: younger son- Takish; older- Yoshikazu (50 or 51)- obliged to succeed his father at the restaurant - Family restaurant - Yabamoto: current sushi book that talks about sushi - Movie is about a guy dedicated to a craft: make sushi; raw fish; - It’s a modern phenomenon to have a wide variety of sushi - Can get it anywhere - Why do the Japanese eat a lot of fish and rice? That is the foundation of their diet - There are many differentiation of sushi; in its most basic form, sushi in its basic form is vinegared rice combined with really any other ingredient , most noticeable raw seafood on a pad of rice - If it is on a pad of rice, it is called Nageeri sushi & something on top - Nori sushi- wrapped in seaweed; rolled up (also called Maki sushi) - Capital is Tokyo - They would have fish and then layer it with rice and then layer it with fish and then let it ferment which is a slow rot & a funky sour flavor- olden days - Since the 1850s and 1860s- when Japan bc of the Meiti Restoration, they used to have food vendor in a Tokyo metropolitan era; great cuisine started by food trucks and people who wanted bite size little foods - Tokyo is one of the richest cities on planet earth; its what you call an Alpha city ; its one of the 47 th prefectures of Japan; there are 47 prefitures of Japan and Tokyo, the city, is one of them; it is the both the capital and the largest and richest cities in Japan and on planet earth , with major metropolitan area with upwards of 37 or 38 million people in it; world’s largest urban agglomeration economy ; Tokyo economy is bigger than virtually half or more than the countries on planet Earth; city has 51 of the fortune of 500 global companies; Alpha city; - The background is Tokyo (subway station) - Legendary in the Ginza District - They will visit the Tsukiji Market (HUGE Fish Market: highest valued; biggest
