IB Biology IA Lab Proposal The Effect of Different Mediums of Pineapple on the Rate of Digestion of the Protein in Gelatin Background Information: Pineapple contains protein digesting enzymes called bromelain. Bromelain is considered a proteolytic enzyme meaning these enzymes break down proteins such as those found in gelatin, like collagen. Collagen is the main structural protein found in animal connective tissue. Enzymes are substances or biological catalysts that that speed up or catalyze chemical reactions by reducing the amount of energy required to start a reaction. An enzyme binds to certain substances via the active site, and either may break down the substrate or bind the substrate in a chemical reaction, for clarification see the image below. Enzyme substrate specificity means enzymes catalyze a specific reaction. The reason I chose this particular research question was initially because I had an interest in enzymes and how they catalyze reactions, basically enzymes are the center of any reaction and that is the very essence of biology. I chose this experiment to really implement the fact that biology cannot happen without enzymes to catalyze reactions. In this pineapple experiment I hope to further understand the
