WEEK 9 JIRO DREAMS OF SUSHI Intro Video Documentary out of Japan in 2011 Only 81 minutes Follows Jiro Ono, the 80 or 90 year old sushi master and owner of a sushi shop He was born in 1925 and is still alive working in his restaurant everyday It is a Michelin three star rated sushi restaurant named after Jiro o It is located in a small shop that seats ten pe0ple at a time, on your way down into a subway station in Tokyo Heads of state from all over visit this place and he is widely admired as the best sushi guy in the world o First rated restaurant in Japan and certainly the highest rated sushi restaurant in the world Jiro is the old man and has 2 sons o The older son, around 50, is named Yoshikazu He will take over the restaurant someday and is waiting o The younger one is named Takish There is a large dedication or driving passionate dedication to work in Japan Yabamoto is a famous food writer and has written books on sushi The story is of a family dedicated to a craft o Jiro is world renown for making sushi and is very dedicated to it o This is a modern phenomenon to have such a wide availability to sushi o Sushi is a distinct component of Japanese culture o The Japanese eat so much seafood and rice because of physical geography and history In its most basic form, sushi consists of vinegar rice and really any other ingredient but most notably seafood o If the stuff is put on a pad of rice about the size of your thumb then it is nigari sushi and this is what we will mostly see in the film o
