Maggie Rold Spanish 1 Cultural Research Paper martes 18de abril While many countries are known for one food dish or another, Mexico has one that is very popular as well. Menudo is a soup that is full of aroma and spices. It is made with tripe, hominy and chili, and is stewed for hours with garlic and other spices. The broth is rich, red, thin, and glistens with fat. Although the fat part doesn’t sound too enticing to me, it has remained a traditional dish for quite some time. Long ago in Northern Mexico, the select cuts of meat were given to the tired soldiers, while the rest of it went to the peasants. The peasants then took these leftovers and created this soup with the tripe (stomach) and the hoof (the calves’ foot). They later added spices and other items to help make it better. One interesting thing I learned is that it is known to be used as a cure for hangovers. They say it is usually always served on New Years morning, and/or otherwise on special occasions or with the family. It is served hot and the ingredients arouse your
