HMD 220: ENVIRONMENTAL ISSUES IN HOSPITALITY Kansas State University, College of Human Ecology Department of Hospitality Management Spring 2016 PLEASE READ THIS CAREFULLY Course Number and Title: HMD 220: Environmental Issues in Hospitality Course description: Overview of environmental issues that impact the hospitality industry. Includes: principles of foodborne disease function and transmission, blood borne pathogens, Hazard Analysis Critical Control Point (HACCP) system, food safety principles and applications, and workplace safety, conservation of natural resources, solid waste management, air quality, and governmental regulations in the hospitality industry. Identify and explain the role of microorganisms and emerging pathogens in food safety. 2. Explain the importance of food safety in foodservice operations. 3. Apply food safety principles in a foodservice operation. 4. Identify safety laws and regulations important to foodservice industry. 5. Explain the importance of emergency preparedness for a foodservice operation. 6. Discuss the pillars of sustainability and how they relate to foodservice and lodging operations. 7. Identify and explain factors impacting the sustainable sourcing and procurement of supplies. 8. Discuss conservation practices in the management of natural resources including water, energy, and materials used in hotels, restaurants and non-commercial properties. 9. Debate the merits and drawbacks of sustainability, and identify areas for improvement in sustainability technology and practices. HMD 220, Spring 2016

National Restaurant Association: Chicago (REQUIRED) o Purchasing ServSafe Course Book: It is best that this book be purchased new, as it will then contain the exam voucher that you need. However, you now have the option of purchasing the exam vouchers on your own, if you wish. This allows you to use a previously owned book or borrow a book from someone. I recommend purchasing the exam book (and voucher) directly from ServSafe ( ). If you go to the website, click on Students, then Purchase, then ServSafe Manager, then Textbooks and Exams. You then want to choose the ServSafe Course book 6 th Edition (I recommend the Course book rather than ServSafe Essentials, as it has much more in-depth information to assist you in preparing for the exam). There are multiple options when purchasing this book (with and without vouchers). o Purchasing ServSafe Exam Voucher: This voucher can be purchased as a component of a new book (highly recommended) or as an individual item.
