FSHN 130 – Nutrition for Living Course Syllabus: Spring 2008 – Section 02 Instructor : Dr Angela P Brown  Office: Eastlick, room 363 E-mail: browna@wsu.edu Office Hours : Tues 9:30 am – 11:00 am  and by appointment    Lecture Time:  Tues/Thurs; 12:00 – 1:15pm Lecture Location : JSHN C107   Textbook : Nutritional Sciences,      from Fundamentals to Food     . 1st edition, 2007.  Turning Point® “clicker” (Packaged with the textbook) Course Objectives : 1. Gain an understanding of the science of nutrition. 2. Identify the major nutrients (carbohydrates, proteins, lipids, vitamins, minerals, water) in  different food sources and understand their function. 3. Understand how nutritional components interact with each other in biological systems. 4. Apply this knowledge in relation to normal health, diet, dietary practices. 5. Apply this knowledge in relation to disease and nutritional deficiencies. 6. Understand the basic issues of food production, food safety and food biotechnology.
