2 Acids and Bases When acids dissolve in water, they release hydrogen ions—H + Bases release OH - ions (and/or accept H + ions) H + ions can attach to other molecules and change their properties § Affects the ionization of molecules § Protein folding, for example, can be affected by pH Acids Organic acids have a carboxyl group: They are w eak acids : not all the acid molecules dissociate into ions COOH COO + H + + + Cl H HCl HCl is a strong acid —the dissolution is complete.
