The Budget Introduction The restaurant concept is that of a small restaurant with a primary focus on the after dinner relaxation that comes with fine deserts and specialty drinks. “ Casual dining is popular because it fits the societal trend of a more relaxed lifestyle” (Walker, 2010 p37). This paper will examine the costs and a total percentage of business expense that is involved with labor, utilities and food cost. It will look at the costs and total percentage of business expense where equipment and maintenance fees and advertising and marketing fees are concerned. It will discuss income from food sales, alcohol sales and merchandise sales. The total of all costs and all sales will be looked at as well. And finally the projected profit or loss and the trends in cost and sales are touched on. All labor costs including benefits and total percentage of business expense. Fifteen percent of the income is budgeted for labor. This allows for a dollar amount of $6,884 per month. This is labor dollars divided by food and alcohol sales. All utility cost and total percentage of business expense.
