Service Diary for Module 4 Company/business:  Mama Teresa’s Pizza, Ithaca, NY The Service Process:  Customer enters store, walks up to counter, picks a slice of pizza  (on display) and orders it. Order taker puts slice on tray and walks it to the oven. Cashier  takes money and gives change. Customer waits and then server puts pizza on plate and  gives it to customer. 1. The company allows these inventories for the following reasons (1) in order to have pizza  slices available to be put in the oven (and so that customers can decide what to order) the  pre-made slices sit on a holding shelf behind the counter (approx. 1-30 minutes); (2) so  that they do not have to invest in another cash register, there is only one available for  ringing customers up (the hot pizza sits for approx. 30 seconds per customer paying in  cash, 1 minute for credit charges).
