Heat exchanger to boil wort. 5.What is the bitter compound from hops? Isohumulone is the major one. 6.What is hot break? Stuff, mostly proteins, coagulated during the boil. 7.How does a chiller work? The chiller has parallel plates defining narrow channels. Hot wort goes in one direction through very other channel and coolant goes in the opposite direction through the remaining channels. 8.What is a whirlpool? How is it used? Vessel in which wort is made to go in a circle. Solids go to center and fall to bottom. It is used to separate hop particles and hot break from boiled wort.
