Comm 204 2016 – Discussion Questions for the “Benihana” case 1. What is the Benihana Concept? Very similar to steakhouse, but food was cooked in front of the customer by chefs, aka teppanyaki style. The name benihana came from the Aoki (concept of small red flower that grew wild near the front of the restaurant) 2. How Does Benihana’s Ops design differ from usual restaurants? - Authenticity, walls, ceilings, beams, artifacts, etc are all from Japan - Cook in front of customers. Less waitressing. 3. How does the process design benefit Benihana?
