CHAPTER 1 – WHAT IS WINE? Key Terms Defined amphora: A jar with an oval body, narrow neck, and two handles used by the ancients. Bacchus: The Roman god of wine. Boom and bust: An economic pattern for wine. Champagne: Sparkling wine. Cooper: First-rate barrel makers. Dionysus: Greek god of the grape harvest. Dom Pérignon: A Benedictine monk who may have invented sparkling wine. Enology: The study of winemaking. Fighting varietals: A category of wine. Phylloxera: A small sap-sucking insect that feeds on roots and leaves. Prohibition: A time in the U.S where the selling of alcohol was outlawed from 1919 to 1933. Trellising: Supporting or tying up vines to train them to grow up trees. Vintage: The origin of the grapes that produce the wine and the year. Viticulture: Grape growing. Volstead Act: Implemented prohibition as the18th amendment.
