Per.2 2-21-17 Cook and write For my cook and write I chose to do a dish that I like a lot. I chose to do cajun chicken pasta, a dish I’ve cooked in class before. This dish is not very hard to make, but it does take attention because any little thing could possibly mess up the dish. The skills I learned in culinary that I used to make this dish were, Mise en place, proper measuring, knife use, presentation, and clean up. This dish was fun to make and using the skills learned in culinary it was much easier to make. Mise en place is a huge component in making any dish, but it was especially important in this dish because after the pasta is done boiling the cooking process is quite fast and everything must be ready to be put to use. The hardest part of this task was making enough space to Mise en place, I was quite used to having a huge amount of space in the culinary lab. In the end though using Mise en place ultimately helped me out more than if I would have not had anything ready to go.
