Enzymes= protein They have an active catalysts site specific for substrates. Increase the speed of a reaction by lowering the energy of activation. Enzymes have a specific shape and that helps it bond to its substrate. Amylase- 1 st enzyme. Works on Amylose Starch- breaks this down into Maltose. - This process is hydrolysis because we are adding water with our saliva and removing what is left. Allosteric Enzymes - Regulated- - Inhibited- blocks so no substrates can bond. - Cooperative bonding- a substrate can bond that makes more substrates bond to it. Carbohydrates (sugars) - Complex carbs – polysaccharides ( many sugars bonded together, very long carbs) - Polysaccharides o Amylose (starch, storage form of glucose in plants) o Cellulose (most common carbon molecule) Found in plant cell walls Dietary fiber Gives us vitamin k, biotin, and folic acid o Glycogen- storage form of glucose in animals o Chitin – found in the exoskeleton of arthropods - Disaccharides – 2 sugars o Maltose (2 glucose bonded) o Sucrose (glucose + fructose) o Lactose (glucose + galactose)
