What kind of sauce is sriracha? Suspension (puree of chili peppers) What are herbs and spices? - plant materials used in small quantities primarily as flavorings - herbs come from green parts of plants - spices come from seeds, bark, and underground stems -> cinnamon, black pepper, ginger Will this molecule (capsaicin) dissolve more in oil or water? Oil Most flavor molecules from herbs and spices are hydrophobic (essential oils). Cilantro (or coriander) contains the flavor molecule decenal, which gives it its fresh taste. Decenal is also easily boiled off when cooking. What type of flavor molecule is decenal? Terpenes Thai basil contains estragole. What flavor family does estragole belong to? Phenolics Why does basil turn black when you cut or handle it? Enzymatic Browning Reactions! What part of a chili pepper is the hottest? Can you design an experiment to answer this question?
