Controls all departments ii. From Host to Executive 1. Was once a host but now mostly deals with business issues iii. Roles of support departments are increasing b. Food and Beverage department i. Production and service of food and beverages ii. Waning out industry wide iii. Headed by Food and Beverage Manager 1. Oversees two sub-departments a. Service i. Restaurants, banquets, events, etc. b. Food Production i. Usually overseen by a chef c. Hotel Manager i. Also called Resident manager, house manager, rooms division manager, Guest services manager, 1. Responsible for all operating departments except F&B d. Housekeeping Department i. Responsible for general cleanliness of guest rooms, corridors, and public spaces ii. Headed by executive housekeeper iii. Coordination between front office and housekeeping is essential e. Security Department
