Field Exercise: Hutong Sushi & Grill Qingyue Tan Introduction Hutong Sushi & Grill is a Japanese Sushi and Chinese restaurant that has opened for almost 6 years. Hutong is located in a neighbor environment on 72nd and Giles, La Vista. Thus, a lot of the customers are regular visitors. Its unique architect attracts many costumers to try out the food and come back again. Hutong has good staffs that cook and give good customer service and provides customers with fresh seafood and a variety of different dishes from the kitchen. It also has an optional section for cooked sushi, gluten free items, and vegetarian choices. Then cofounders of this Asian restaurant are Mike and Andy. Mike works full time in Hutong, managing to keep the restaurant pulled together into a very nice place perfect for dates or just somewhere to hang out with a few of buddies. Hutong recognizes that a food service management company is only as good as the people doing the managing. Management is key to performance. The restaurant believes that effective management, systems, and resources are needed to strengthen program quality. Hutong Sushi & Grill employs great staff to fulfill proper service in the restaurant and a great manager Mike to oversee the day-to-day running of the dining service. Hutong food management service has been somewhat consistent with their goals and objectives by providing nutritious, good quality meals and great management for a smooth food service day. This field exercise was performed at the Hutong Sushi & Grill and the meeting with Mike took place between 2pm and 3pm on Wednesday. I am very familiar with the staff at: Hutong Sushi & Grill because I personally love sushi pretty much and I eat there a lot. The first time I went to see the food director Mike he was very busy, and he thought I came to get lunch. I told him I need a favor for assignment and he was surprised and very patient to help me with this field exercise at that time. 2 | P a g e

This food services believes in management, performance and healthy, fresh and the best ingredients to make a decent meal for a customer.
