Unformatted text preview: there are certain factors that you want to look for before buying. The fish should smell fresh and mild, not fishy, sour, or ammonia-like. The eyes should be clear and bulge a little. It should have firm, shiny flesh and spring back when pressed. It should not display darkening or drying at the edges. If you feel that your fish smells a bit too fishy you can remove the odor by washing the fish in a solution of baking soda, lemon juice or vinegar.
