Unformatted text preview: NS 332 Project I: I nterpretation of Food Labels (50 points) Due: 3/5/2008 Scenario: Katrina Lewis lives in an isolated portion of Oklahoma that happens to be in Tornado Alley and wants an emergency food supply for herself in preparation for tornado season. Help her to design this emergency food supply from the 22 attached Nutrition I nformation Labels (there is only a small country store near Katrina with limited supplies). With the limited number of choices, it will NOT be possible to design a nutritionally perfect emergency food supply. However, you are expected to select the best diet you can and recognize the shortcomings of the items you select. You must use both DVs and RDAs in this project when asked. While the RDAs are the most appropriate tool for diet design, it is important you also use the DV. You are playing the role of the consumer. Make your choices based on the information provided from the Nutrition Facts label. A. Dietary Requirements of the Emergency Food Supply: Supply is to last 14 days. Assume that she will eat the entire contents of a can or jar if it would otherwise spoil after opening (i.e. canned chicken). I t must be shelf-stable (will not spoil) for 3 months of storage so that Katrina can put this in her food storage locker at the start of tornado season and have it there when and if a tornado strikes. She has a camp stove and fuel to use, but assume she will not have power for a refrigerator. Assume that she will also have a can opener, eating utensils, and a pocketknife. I t must meet at least 80% of her Estimated Energy Requirement (EER) to prevent rapid weight loss I t must provide adequate protein and at least 1000 kcal/d of carbohydrate in order to maintain glycogen stores for potential heavy exercise in case of the need to repair structural damage to her house. Try to meet the Daily Values (DVs) for iron, calcium, vitamin A, and vitamin C Try to keep the average sodium intake below 2300 mg/d so as not to increase her water requirement secondary to increased urine production.
