Carbohydrate Assignment 1. Lactose intolerance is when the digestive tract of the body struggles to digest sugar in  milk causing painful gas and other pains.  The cause of this is the insufficient production  of lactase, there’s an enzyme in the small intestine that is supposed to split the  disaccharide lactose into monosaccharides glucose and galactose which is then to be  absorbed. This inability to produce this enzyme is what causes the intolerance. When  someone who is lactose intolerance consumes milk they experience nausea, pain, diarrhea and gas. For someone who has mild lactose intolerance I would advise them to try to  consume yogurt instead of milk because the nutrients in milk is really important, but  yogurt still contains some of these nutrients and not as much milk. Consuming this yogurt won’t hurt the tummy as much. I would say maybe try to consume little milk throughout  the day in little amounts. Since the condition is only mild, drinking a little amount of milk shouldn’t hurt or affect the body as badly. However, with someone who has severe  lactose intolerance I would suggest eating other foods rich in calcium. The best advice  would be to consume yogurt as well as this is a great substitute for milk. Since their  condition is severe drinking milk is not a great option. 2. Refined grains are originally whole grains but are processed to have a longer shelf life.  This processing refers to certain coarse parts being removed, this gives it a better texture.  Many of the refined grains are low in fiber and have high amount of vitamins. Therefore,
