Enterobacteriaceae -Gram (-) rods -aerobic -interstitial infection -oxidase (-) -ferment glucose -food bourne: Salmonella, E. coli, Shigella gersiniae -others: Proteus, Klebisella, Citrobacters, Enterobacters II. Salmonella -Gm(-) rods Symptoms: -fever -nausea -6-48 hrs for onset -2-3 days duration, could be weeks -people go to doctor w/this so it has higher rates -don’t know infectious dose, 10-10 4 ? -less in higher fat foots -chocolate -chicken is associated with Salmonella -60-100% have Salmonella -Eggs: Salmonella Enterditis, inside eggs when it is formed -shouldn’t eat raw eggs -1 in 100,000 eggs has it -almonds, cantaloupe (water), tomato (no idea, maybe water), unpasteurized milk, ice cream, eggs -survive in freezing/drying conditions, low Aw, low moisture content -Salmonella is linked to arthritis -outbreak in unpasteurized OJ, came from frogs -control: on the farm (w/poultry), water supply on farms, cook food 02-28-07 I. Campylobacter -Gram(-) rod -microaerophilic: 5% O2, 10% CO2• - C. jejuni, C. coli, C. fetus -found in poultry and unpasturized milk -symptoms like salmonella but may have blood in stool • E. coli: very common in animals and us 1) enteropathogenic EPEC -leading cause of diarrhea in developing countries (un-chlorinated water)
