Lecture 1: Foodborne Illness Lesson 7 1. What is causing us to get sick? -Bacteria- 5 million -Parasites- 2.5 million -Viruses- 31 million -Unknown Agents- 40 million 2. Foodborne infection: -eating food that contains harmful microbes, these microbes cause an internal infection -most common way in which food makes us sick -Salmonella and E. Coli are examples -Incubation period- hours or days- before symptoms occur - microbes pass through the stomach into the intestines and attach to the cells lining the intestinal walls and begin to multiply -most common symptoms are: abdominal cramps, diarrhea, and nausea Foodborne intoxication: -microbes can grow in the food before you eat it, producing a toxin in the food and the toxin makes you sick - this occurs less frequently -this makes you sick more quickly -onset is often within 30 minutes to 1 hour b/c toxin is already in the food -illness usually lasts less than 24 hours -symptoms- nausea, abdominal cramps, and violent vomiting 3. Special features of bacteria that ‘help’ them cause illness: -bacteria found everywhere -cells are protected by cell wall and capsule -cells are often motile (flagella) allowing them to avoid phagocytes -bacterial cells produce toxins and enzymes 1
