The pancreas is both an endocrine and exocrine organ because the endocrine portion has pancreatic islets that secrete insulin and glucagon. The exocrine portion is 99% of the pancreas that secretes 1200 to 1500 mL of pancreatic juice per day. 5.What is a zymogen? Zymogens are digestive enzymes secreted as inactive proteins. They are converted to active enzymes by removing some of their amino acids.
