SIDE NOTES – ReCap of last class Lactose = Galactose + Glucose - can’t be digested, it’s a disaccharide - 70% of people are lactosintolerant o If you are, you can still eat some dairy foods like yogurt and aged cheese Glucose - main source of energy in cells Glycogen - is in your liver Protein - only proteins can make skin and DNA Adrenaline - this hormone can affect your blood glucose because your blood glucose is regulated by homrnones Diabetes - is an epidemic in the U.S. It is second to obesity. o Type 1 Diabetes When you can’t produce insulin o Type 2 Diabetes When you can produce insulin, but it doesn’t work very well SLIDES BEGIN HERE - Glycemic Index of food – How much will something raise your glucose level o Classifies foods based on their potential to raise blood glucose levels o Expressed as a percentage of the response of glucose o High glycemic index foods trigger sharp rise in blood glucose and that causes your insulin level to rise - Glycemic index of foods not always as easy to predict
