Day 1 Salad Production Give a description of your salad as you would present it on a menu: The salad was a very colorful mix of greens with yellow and red bell peppers, cherry tomatoes and red onions as garnish. The dressing consisted of a sweet and sour vinaigrette. Type a list of ingredients that you used on your salad today: The dressing consisted of a 3:1 ratio of oil to apple cider vinegar, 1 ½ tablespoons of whole grain mustard, ½ a lemon squeezed, 1 shallot, 4 cloves of garlic, 1 ½ cups of brown sugar photo of salad: What were some of the things that were described as positive about your presentation? The salad had a variety of different colors and when we ate the salad it had powerful and exploding flavors. The line of tomatoes blended well with everything and the greens had a stringy flavor.

What were some of the things that could be improved upon? We could have improved a little in the presentation, but because it was our first day we thought about it and instead of having the dressing in the salad we could’ve had it on the side. Personally, I would’ve cute small dice everything just a personal thing. By the time service came the salad was a little soggy but overall it was good. Feedback: I liked the fact that all the canapés were set up on the wooden board aligned and in neat way.
