Jimmy Tsz Yuen Chan Prof Lovejoy English 90 3-14-17 Process Essay: Baking Ever since I was a child, I had an interest in baking. This was not the kind of interest that I wanted to develop into a career or one of those serious hobbies that consume most of my time. I just preferred cooking my own food whenever I was hungry. Somehow, my mother noticed this and secretly put me on a number of cooking tasks or meal preparations. I did not have an extensive list of dishes that I could cook nor claim to like, but I knew how to prepare a fancy dish. I could cook pasta, pies and bake my favorite cookies. I have really perfected my art of baking cookies. My favorite kind is the chocolate chip. My mother makes one of the best chocolate chips, so I had to learn from her expertise in this area where she can happily say, “I am a consultant.” I resolved to learn from her secret method, not because I also desired to be a consultant, but purely out of interest. My mother and I bake anytime we are in the house together and we ensure that we do it in such a way that the whole family enjoys this delicious treat. We generally ensure we have enough ingredients among us and we make a checklist of the ones missing for me to pick from the store. On my way from my errands, I pass by the stores and bring the required ingredients. Before we start heating, we first pre‐heat the stove to 350-400 degrees. I additionally ensure that we have blending bowls, two wooden spatulas and two place spoons for scooping the mixture onto the preparing sheet.

Once we have put in place the preparation set, we begin mixing the ingredients. We start by blending the sugars, spread, vanilla, and eggs together with a wooden spoon. When we have guaranteed that they are combined, we include the flour, raising agent, and salt to the mixture. We then stir the mixture once more. To ensure that the dough is ready we pinch just a tiny piece of it and squish in the middle of our fingers. When we vaguely feel the crunch of sugar and salt, we stop the mixing. The second step is adding the chocolate chips. My family prefers the Hershey's chocolate chips. I then add one and a half cups of Hershey’s chocolate chips into the mixture. I usually mix the dough with the wooden spoon until the moment when I can no longer see any chip free spaces in the mixture. The final step in our recipe is usually placing the dough in the oven. In order for us to achieve perfectly sized cookies, we use the place spoon. We then place the lumps of dough on the baking sheet that has already been oiled. Since the oven is preheated, we place baking sheets on the middle rack of the oven. Although most baking instructions indicate that the dough should be in the oven for ten minutes, our oven usually requires fifteen minutes. If one is not sure, when the cookies are ready, one should just stick a toothpick in the cookie at the middle and when it comes clean then the cookies are ready. My mother and I feel that quality assurance is of top priority and we have to test each batch coming out of the oven. As they are still warm, they melt
