Naznin Miah NFS 2220 11/01/18 Lab 2: Carbohydrate Metabolism Abstract/Introduction: To convert food into energy and nutrients, it must be chemically broken down using enzymes and acids. An enzyme is the catalyst that turns a substrate into a product. The speed at which an enzyme works can depends on the amount of substrate, amount of enzyme, temperature, and pH. Amylase will be used to break down starch to maltose. Iodine reacts with starch to form a blue-black color complex. As the starch is hydrolyzed by the amylase, the iodine will change from blue-black to purple to red brown to orange brown to orange to colorless. The colorless complex means the starch is completely broken down by the amylase. Purpose: The purpose is to introduce metabolism by examining the effect of an enzyme (amylase) on a carbohydrate (starch). Materials/Procedure: The materials we used were pipets, pipet tips, a glass beaker, test tubes, enzyme (amylase), starch (maltose), NaCl, PBS, iodine, wells, hot plate, tube vortex, and a timer.
