Naznin Miah NFS Lab 2140 10/16/18 Lab 4: Starch and Dough Formation Intro/Background: In this lab, we studied starch and dough formation. Starch is a polymer of glucose. It is produced by plants and is deposited inside the plant cell in the form of granules of different shapes and sizes. There are two types of starch molecules: amylose and amylopectin. Wheat flour is composed of starch, protein, gliadin, and glutenin, and lipids, manipulation, and leavening agents. Materials/Methods: The materials we used in our experiment was all purpose flour, tapioca flour, corn starch, water, pots, and whisks and spatulas to stir. We first boiled one cup of water in a little pan and then added all-purpose flour to observe the lumps. We also heated up one cup of water in a separate pot and added it to a bowl of one cup tapioca flour to observe the consistency and lumps. In the second part of our experiment, we again boiled the water and added all-purpose flour but also added ½ teaspoon of corn starch and mixed it all together. For the tapioca flour, we
