Naznin Miah NFS 2220 11/08/18 Lab 1: Digestion Introduction/Background: The purpose of this lab was to observe digestion by measuring the glycemic index of various foods and identifying the effects of carbs, fats, and proteins on blood glucose levels. Glucose is the preferred form of energy use by the body. Glucose comes from carbohydrates in our diet and within the body is it converted from glycogen, glycerol, or amino acids. Insulin is the hormone responsible for glucose utilization. If there is an issue producing insulin in the body, the fasting blood sugar level is higher than normal and a person is diagnosed as a diabetic. The glycemic index is the measure of how quickly blood glucose levels rise after the consumption of food. Fats and proteins eaten with high carbs cause the stomach to empty quickly resulting in a slow rise of the blood glucose levels. Fiber also causes a slow rise in glucose levels due to a longer time taken to absorb in the small intestine, which is the site of glucose absorption.
