The absorbed lipids are transported via chylomicrons into the lymphatic system. Mastication begins the mechanical digestion of food. Solid fat melts with the warmth of the body. Lingual lipase in the saliva begins the chemical digestion of triglycerides. Peristalsis mixes and churns the fat-containing food with gastric juices. Gastric lipase hydrolyzes some triglycerides, creating diglycerides and free fatty acids. In infants, lingual lipase also continues hydrolyzing triglycerides in the stomach. Bile secreted from the gallbladder through the common bile duct into the duodenum emulsifies fat into smaller globules. Pancreatic lipase hydrolyzes triglycerides into monoglycerides, glycerol, and free fatty acids.
