FRUIT CAKE ( Eggless, Vegan ) Mixed dried fruit - Use a mixture of: 1 ¼ cups dried apples 4 cups raisins 1 cup plus 2 T. dried ginger ½ cup dried apricots chopped small ½ t. cardamom powder 2 cups crushed pineapple in natural juice ½ cup orange juice 2 cups whole wheat flour 2 mixed Flax Eggs (2 T. ground flax seeds mixed with 6 T. water, let sit for about 15 minutes) Preheat your oven to 300°. Line an 8x8 baking dish with some non-stick parchment paper. Put all of your dried fruit into a large pan or pot and add in the pineapple and spices. Also add in the orange juice. Turn on the heat and bring to a slow boil, then reduce the heat and keep on a high simmer for 3 minutes.
