1. Physiology of Digestion a. Digestive processes occurring in the mouth, pharynx, and esophagus. i. Ingestion - been there, done that ii. Mechanical digestion - ditto iii. Chemical digestion - begins in the mouth and ends in the small intestine b. Composition of saliva = mostly water with some electrolytes, salivary amylase, muscin, lysozymes, antibodies (kills some microorganisms), and kallikrein (regulates saliva production). c. Control of salivation = secreted continuously, but increased production triggered when food enters the mouth; autonomic nervous system regulates output as stimulated by chemoreceptors and pressoreceptors in the mouth. d. Propulsion - begins with deglutition = a involuntary process controlled by the medulla and power pons, where the food is swallowed; passage through the pharynx (over the epiglottis) and into the esophagus; rest is involuntary peristalsis = successive involuntary smooth muscle contractions that functions to propel foodstuffs.
