Cooking Diary 4 For cooking diary 4 I chosen to make Veal Kebabs from chapter 14 page 0. Veal Kebabs: Yield: 1 serving, 1 each Method: Sautéing onion 1/4 ea pepper, green bell 1/4 ea veal, boneless leg (cut into 1-inch cubes) 8 oz Marinade oil, olive 1 fl oz wine, white 1/2 fl oz Lemon Juice (fresh) 1/2 fl oz Chopped Fresh Herbs 1 1/2 tsp salt to taste pepper, ground black to taste I have chosen to replicate veal kebabs because I love all things grilled especially grilled veggies. To save time I made the marinade the night before and set it in the refrigerator and then the next morning marinated my kebabs/ I combined 1 fl oz of olive oil, ½ fl oz of white wine, ½ oz of fresh lemon juice ½ fl oz, 1 ½ tsp chopped fresh herbs and salt and pepper to taste.
