First Didi’s Recipes have been grouped into Appetizer, Entrée and Dessert, Miscellaneous Vikram’s mom’s recipes follow that Roommates’ recipes after that At the end are some recipes I took from the internet To Try Methi Malai Mutter Saag paneer Vegetable makhani Aloo gobi Spinach Dal Mashed potatoes Saag with egg plant and garlic add lot spices and a little sugar Navratna korma Dum aloo kashmiri Achari aloo Raw mango in dal Raw mango fry shorbot Dahi Vada Eggplant fry(begun bhaja) marinate the brinjal in chili powder, salt, dhania jeera, turmeric powder, coriander powder, sooji/rice flour (little) Fry Dal Makhani Malai Kofta Appetizers 1. Samosa 2 cups plain flour 3 tbsp melted ghee Salt 1 cup cauliflower 2cups potatoes boiled 6-7 green chillies 1 tsp ginger grated 1 tsp panchphoran ½ tbsp coriander finely chopped ½ tsp amchoor(dried mango) powder ½ tsp garam masala ¼ tsp turmeric Salt ½ tbsp raisins

1 tbsp cashew pieces 3-4 pinches asafetida 1 tbsp oil Sift flour and salt together Add ghee and mix well Add water to knead a soft dough Cover with moist cloth and keep aside for 30 mins Brush liberally with ghee, knead, cover again and keep aside. For filling: Grate cauliflower, mash potatoes, and finely chop green chillies Heat oil, add cashews and fry till light golden Add panchphoron and allow to splutter add cauliflower Add all other ingredients and mix well Take off fire. Keep aside To Proceed: Make small balls, the size of small lemons, from dough Knead one into thin chapatti about 5 inch diameter Cut into half, take one, fold into cone, seal edge with some water Fill with 1 tbsp filling, seal open edges to form triangular pyramid Seal edges and corners well with moist fingers Make 4 or 5, deep fry in hot oil till golden and crisp Serve hot with green and tamarind chutney 2. Salted Nimki ½ kg flour(maida) Oil Salt Caraway seeds ( nigela) Knead all the ingredients well with water. Make small balls and flatten them into thin chapattis and cut them into diamond shape Deep fry 3. Sweet Namki Everything same Don’t put caraway seeds You will have to make a sugar syrup and dip the namkin after it is fried into the syrup and keep it aside 4. Vada For Vada everything same, Except to the batter add some curry leaves, Finely chopped green chillies, Chopped onions(optional), ginger paste NO GARLIC, add seasoning of urad dal and mustard seeds(optional)

Then deep fry the vada(bigger pieces) 5. Kachori Ingredients: 3/4th cup skinless dried black beans (urad) 4 cups Flour (atta) 1 green chili chopped 1/2tsp Salt Oil for deep frying 1tbsp anise seeds (Saunf) 1tsp coriander seeds 1tsp white cumin seeds 1/2tsp red chili powder 1/4th tsp asafoetida powder Preparation: Soak the beans in water overnight then rinse and drain. Sift the flour and gradually add enough water to make soft dough. Cover the dough with damp cloth and leave for 30 minutes.
