AEM 4480 Food Merchandising Spring ‘09 Prof Perosio Due: April 7, 2009 in class The design of modern supermarkets is both an art and science. It is an art form in terms of décor, image and the inclusion of specialty departments. It is a science in terms of control and direction of customer traffic. I have discussed with you several examples of store layout where customer traffic is controlled to varying degrees. Also each month in the trade publication ”Progressive Grocer” there is an example of a new supermarket which the magazine has selected as its’ “store of the month.” Within these articles, there are usually good examples of store designs that are a good reference for this assignment. Your assignment is to develop 2 layouts for your store. PART I: The first layout should include the following: 1. The location of each major department in the store and the entrances/exits. 2. The general location of display cases in each department.
