DIGESTION NOTES (The following is an outline of important digestion topics that were discussed in section.) A. Nutrient – Definition? What are the six classes of nutrients? What are the differences of macro and micronutrients? Why does the body not want to immediately use protein for energy production? B. Calorie – Definition? kcal vs cal vs Cal. How many kcal/gram do carbs, fats, proteins, and alcohol contain? C. Example: How many kcal are in a slice of bread that contains 3g of fat, 10g of carbs, and 5g of protein? D. Energy density – How is it calculated? Does a food become more or less energy dense if you increase the amount of calories in 1 gram of that food? See Table 2-4 in textbook. E. Nutrient Density – How is it calculated? What two values do you have to compare to find out how nutrient dense a food is with respect to that specific nutrient? F. Dietary Guidelines – (See pages 51-56 in textbook) What are the the guidelines? Who determines the guidelines? Why are they needed? What are the limitations of the guidelines?
