FDSC 1500 Lecture 2 Consumer food spending o Food at home and food waway from home have increasesed over the past 20 years Food expenditures o Spending on food away from home reached 48.5% of the $1.16 trillion in total food expenditures in 2008 o 2008 food expenditures: total US per capita food spending = $3,832 with $1,973 spendt on food eaten at home and the rest on food eaten away from home o Consumers spend only 9.6% of their disposable income on food o As disposable income increases the share spent on food decreases Demographic and lifestyle trends o Population: in the last 25 years there has been an unprecended shift in the size and structure of the nation’s population o The population is now 309 million people, more females than males and average life expencancy is 80 for females and 75 for males o Life expectancy is due to Decreases in infant and child mortality Reduced mortality in child bearing
