Food Science 11/4/09 Nutrients in foods Needed for growth and to maintain health Include Carbohydrates, fat, protein, vitamins, minerals, water Energy is measured in kilocalories( C ) Requirements are 2000- 5000 C per day depending on what you do Need energy to keep up body temperature Energy is measured in heat unit- kilocalories- amount of energy needed to change one kilogram of water one degree Standard for adults is 2000 C per day, for huge amount of physical work we need 5000 C Number one source of calories is Carbohydrates 4C/gram Protein= 4C/gram, fat= 9C/gram- these values assume there is perfect digestion If you ocnsume more Calories then you need- store excess as fat If consume less- body breaks down body If starved breaks down body fats, ten proteins Proteins as nutrients An expensive form of energy Provides nitrogen needed for synthesis- body break them down to amino acids then resynthizing Provides nitrogen needed for synethesis Contain nine essential amino acids (histidine, valine, trypophan leucine, isoleucine,
