Objectives Primary To determine the effect of apple beverages on tooth frangibles; o The decalcification of teeth (dissolution of calcium hydroxyapatite) due to exposure of apple beverages. To determine the pH and buffering capacities of apple beverages Secondary To identify the organic acids present in various apple beverages To identify and quantify ions present in the apple beverages To quantify the amount of sugars in the form of organic carbon present in various apple beverages Experimental Strategy General required materials The following materials must be acquired before starting the experiments: Apple beverages (regular, low acid, added calcium, 5% alcoholic cider, non-alcoholic cider and apple-grape juice) Standard solutions for calibration The chemical analysis equipment that will be used is outlined below. It includes the required materials specific to each apparatus, as well as what will be obtained after performing each experiment. 1. Automatic Titrator The automatic titrator will be used to elucidate the pH and the buffering capacities of the apple beverages. Specific required materials Buffer solutions for the automatic titrator

The ICP-OES will be used to discover the cations, such as calcium and magnesium, and their specific amounts present in the apple beverages. Specific required materials: ICP-OES torch 3. Ion chromatography (IC) The IC will be used to identify and quantify the anions present in the apple beverages, such as fluorine, chlorine, nitrate and phosphate. 4. High performance liquid chromatography (HPLC) The HPLC will be used to identify the organic acids present in the apple beverages, such as ascorbic, butyric, citric, malic and salicylic. 5. Total organic carbon (TOC) analyzer The TOC analyzer will be used to quantify the amount of organic carbon present in the apple beverages. Specific required materials:
