DRYING The removal of water The aim of this processes for biological materials to stabilize them for storage or distribution. Drying always causes some loss of activity or other damage. There are several types of drying methods: 1. Drying in oven 2. Drying in open air 3. Sun-drying (Solar drying) 4. Freeze drying FREEZE DRYING (LYOPHILIZATION) derived from-Greek-made solvent loving a method of drying that significantly reduces such damage. works by freezing the material and then reducing the surrounding pressure and adding enough heat to allow the frozen water in the material to sublime directly from the solid phase to gas. the most complex and expensive form of drying, its use is usually restricted to delicate, heat-sensitive materials of high value Substances that are not damaged by freezing can usually be lyophilized so that refrigerated storage is unnecessary. (Important exceptions are mammalian cells, nearly all of which are destroyed by lyophilized.) The preferred method of preservation in the biotechnology industry-used to preserve vaccines , pharmaceuticals, and other proteins. used to preserve special food products, eliminating the need for refrigeration. Freeze-dried food is eaten by mountain climbers and astronauts
