Nutrition Chapter 1 Notes 1/28/10 What is Nutrition? o Nutrition is the science that studies food and how food nourishes our bodies and influences our health. It encompasses how we consume, digest, metabolize, and store nutrients and how these nutrients affect our bodies. o The discipline that encompasses everything about food. Why is Nutrition Important? o Nutrition is one factor that contributes to Wellness Wellness is the absence of disease. Wellness is now considered to be a multidimensional process that includes: physical, emotional, social, occupational, and spiritual health. o Healthful nutrition and regular physical activity can increase feelings of well-being and reduce feelings of anxiety and depression. o A healthful diet can prevent some diseases and reduce risk for others. Nutrient deficiencies can cause serious and life-threatening diseases such as: scurvy, goiter, and rickets. Healthful diet can reduce the risk for chronic diseases such as: heart disease, cancer, cerebrovascular disease, and type 2 diabetes. Obesity is significantly affected by nutrition. What are nutrients o Nutrients are chemicals that are critical to human growth and function. o The six groups of nutrients are: Carbohydrates, fats and oils, proteins, vitamins, minerals, and water. o
